Good food

When preparing for Caleb's arrival I cooked up a storm and froze it all so I didn't have to worry about food and dinners for a while after he was born. (I think I had like 20 days worth of dinners in the freezer!) Now I'm not sure I'll go quite that crazy this time. But I do want to make some meals ahead of time.

Here's where YOU come in! I'm really wanting some new recipes. Preferably one's that freeze well and don't include heavy starches like rice, potatos, beans and pasta. Though I do eat whole wheat pasta. But I can't eat the rest of that stuff, or sugar for that matter. Do you have a favorite recipe or two or three that you could send my way? And if it does have some ingredients I can't have, I'm pretty good at tweaking things to my hypoglycemic diet. Casseroles and soups are especially good for freezing. But I'm bored with what I have. So step up and help this mama get ready for her baby girl to come!

I can't think of any recipes off the top of my head that don't pasta, etc. but you could freeze taco meat or mix spices into hamburger meat and make hamburger patties (we grill them while they are still frozen sometimes and it works fine). Can you eat cheese? My mom has a really good cheese soup recipe that freezes well.

I like to make meatballs and sauce and freeze those. Then when it's time to cook, just boil a pot of whole wheat pasta...just a thought!

Can you do bran muffins? I have a great bran muffin recipe that keeps in the fridge for about a month or two. I know it sounds bad to keep that long, but the ingredients are such that it ages really well. Anyway, I know it's not dinner, but it is fun to scoop it in the morning and bake it quick for a homemade breakfast.

casseroles! that's what we need. anyone with casserole recipes? there's nothing quite like out of the freezer, into the micro, down the hatch kinda simplicity.

I have a great recipe for South of the Border lasagna with corn tortillas I was planning on posting next week. It isn't microwavable, but it freezes great. Stay tuned...

This recipe has rice in it, but it freezes pretty well, and as it "ages" in the fridge, it gets better (kind of like spaghetti). The downfall is that it has rice, but since you said you may be able to work around stuff, I thought I'd suggest it:

jlg- Yes I can eat Cheese. I'd LOVE a cheese soup recipe, my mouth is watering as I type.

Kim-Good idea on freezing the meatballs and sauce. I love making my own sauce (as commercial types contain sugar), so that would be a great idea for me. Thanks!

Sember- I might be able to bran, can I have the recipe anyway?

Kristen- I'll watch for your corn tortilla lasagna. I've made a tortilla lasagna a long time ago, I'd be curious what's in yours.

stelmodad- yeah I was thinking of hiring a personal chef and charging the bill to my neighbors across the street! ;)

Oh yeah, and if your casserole has rice in it, no problem, I shred cauliflower into "rice pieces" and use that as a replacement. Also if your recipe uses spaghetti or some other pasta, I can replace the pasta with using a Spaghetti sqaush. I've you've never tried spag squash, you HAVE to. They are great, and about to be in season again.

Quiches freeze really easily. If you can't handle store-bought dough then you could prepare them without crusts. I like bacon/spinach and ham/cheese combos. I also have great freezer recipes for easy Chicken Cordon Bleu, Chicken Roll-Ups (with bacon and cream cheese filling), Italian Meatloaf, Pizza Casserole (you could use whole wheat pasta), and various chicken packets for the grill or oven (Pesto, Oriental).

I used to be part of a freezing co-op. Four women would get together and prepare 30 meals (=120 total) all in one day. Email me if you'd like to get some of these recipes.

Gumbo!!

Basically chicken in broth with okra, celery, and onions sauteed and dumped into it with a roux to thicken it. (To make a roux, sautee about 1/2 c oil and 1/2 c flour, stirring constantly until a brownish color.) eat over rice. Throw in sausage, bacon, or shrimp or whatever else.

Here is the cheese soup recipe, it does have potatoes which I forgot about because I haven't had it in a while, but you could probably make it without them or use something else
6 C. water
4 chicken bouillion cubes
1 C. onion, chopped

Cook 20 minutes then add:

1 C. celery, chopped
1 pkg. mixed vegetables

Cook 20 minutes then add:

2 1/2 - 3 potatoes, cubed
2 cans cream of chicken soup

Cook 20 minutes then add:

1 can minced clams
1 lb. velveeta cheese

Cook until cheese melts.


It is very very yummy and freezes really well. My mom will make a whole bunch at once when it starts to get cold and then freeze it in small amounts to pull out.
